I finally did it. I bought a #Vitamix. Yup. And guess what? It was love at first bite. This wasn't something I did on a whim. I didn't just start juicing because everybody's doing it. Just so you know. I wasn't sure about buying such an expensive blender. It seemed a little excessive. I didn't get how different it is from the standard blender until I threw my first cucumber into that bad boy. It is truly amazing. And you only know until you have one. I also prefer the fiber approach to the whole juicing thing. Some people like the fiber out. That's what "cold pressed" means, it removes the fiber and leaves the pure juice. But for me fiber is good. Enough said.
The other zeitgeist I've recently signed up for is kale. I love kale! Who knew. It's bitter and fresh, a great complement to apples, cucumbers, and blueberries. I add a splash of lemon juice to taste and that, my friends, is my favorite kale concoction. Here's the recipe: 1 cucumber quartered (with skin) 3 kale leaves (remove stems as they can add bitterness) 1 apple quartered (use a sweet version like gala or red delicious) 1 cup blueberries 1 cup water 1 cup coconut milk Lemon juice to taste Enjoy!
